A dry wine beside a sweet plate tastes thin. Plantain, a glossy sauce, a dish with a little sugar: the wine has to be at least as sweet as the food, or it needs bubbles and a clean finish. If the food is sweeter, the wine tastes sour and empty. Un vino seco al lado de un plato dulce sabe flaco.
