Stewed
A guiso
Cooked
Cocido
The fruit smells cooked, like jam left on the stove. The freshness is gone. Cold hides this until the glass warms in your hand. A pushed cork can sit with it. Heat is where that damage happened. This room is only how you recognize it.
Wet cardboard
Cartón mojado
Corked
Acorchado
A corked wine smells of wet cardboard, a damp closet, a newspaper left in the rain. The fruit goes quiet. It is the cork, not your nose failing you. One bottle can be corked and the next one sound. You are allowed to say so.
Puedes decirlo.
A sharp smell
Un olor afilado
Vinegar
Vinagre
Vinegar, or nail polish, means the wine is turning. A faint sharp lift in an old wine can belong to it. When that smell fills the glass and the fruit is gone, the wine has left. Fino is not this. Fino is salt, almond, and the sea. Vinegar is sour.
No villain
Sin villano
Tired
Cansado
No cardboard. No vinegar. No stew. The fruit has simply left. The wine is quiet and flat. It is not a fault. It is finished. You do not owe it the rest of the night.
And still not yours
Y aun así no es tuyo
Sound
Sano
If none of those smells shout, the bottle is allowed to be itself. Fruit, earth, salt, flowers, a bitterness, a tannin that dries the mouth. You may not want it. That is not a fault, and it is not a score. Pass it. The table already keeps a glass for the person who is not drinking.
