What the books meant
Lo que decían los libros
The old room
La sala de antes
Room temperature, in the old phrase, was a cool room. About 60 to 65°F, 15 to 18°C. A kitchen at 82°F is not that room. A red drunk there is a warm red. The fruit goes soft. The bottle was not made for the air you are standing in.
Unos 60 a 65°F, 15 a 18°C.
The car, the dock, the counter
El carro, el muelle, la encimera
Cooked
Cocido
Heat that lasts cooks a wine. The smell goes stewed, the freshness leaves, and a cork can push. On a hot day, the time it takes to shop is enough to hurt a bottle in a closed car. The trunk is not a cellar. A hot container, a sunny dock, a month on top of the fridge. The refrigerator afterward does not bring it back. Cold hides the damage until the glass warms.
The coolest dark
Lo más fresco y oscuro
Where it sleeps
Dónde duerme
Weeks of warmth dull a young bottle. Months can cook it. Let it sleep in the coolest dark place you have, away from the stove and the top of the fridge, where the motor warms the cabinet. A cork that will stay for months prefers to lie down. A sparkling wine can stand. A wine fridge near 55°F, 13°C, is the easy answer if you keep more than you will drink this week. Steady matters more than a perfect number. Humidity is not the enemy here. Heat is.
Cold, cool, the old room
Frío, fresco, la sala de antes
The pour
Al servir
Sparkling, fino, and manzanilla want cold, about 40 to 48°F, 4 to 9°C. A light white or a rosé wants the next step up. A richer white wants cool, about 50 to 55°F, 10 to 13°C. A light red wants that same cool, not the ice and not the open air. A bigger red wants the old room, about 60 to 65°F, 15 to 18°C. Twenty minutes in a bucket of ice and water does more than an hour in the fridge door. Take the red out before the cold numbs it. If the room is hot, pour less, and more often. The glass warms fast.

The trip
El viaje
Ask when it arrived, and whether it was kept cool. A wine with acid, meant to be drunk young, shows a hot trip quickly, and tastes like itself when the trip was kind. Albariño, txakoli, verdejo, dry rosé, cava, beaujolais. Fino is glorious and fragile. Oloroso, already oxidative, bears heat with more grace. A pushed cork, or a sticky neck, is the bottle saying the heat got there first.
A short chill
Un frío corto
Twenty minutes
Veinte minutos
The freezer is a tool for about twenty minutes, not a cellar. An hour can turn a bottle to slush and push the cork. Ice and water together chill faster than ice alone, because the water touches the glass. Then dry the bottle. A wet label is not a flaw. A frozen bottle is.
